Scheduling pages for publishing

Recently we tried to use the publishing from and to date fields as mapped out here but it behaved differently than we thought it would. The user created the page and was testing it out on stage, where it seemed to work fine when the publish date fields were set. A few weeks later, she updated the date range for a future date and published, but the page appeared right away. It looks like it was because the publish from date she originally set the date for had passed by that time so the page was shown. So given this situation, what should we have done in order to prevent that?

IF you are using workflow publishing and the scheduled publishing, see also this article.
Also, keep in mind that if there was already a published version of the page, then this will be still visible until the schedule of the newly published version.
If I am getting this right, you expect that after you set a new schedule, the page will not be visible on the live site. If this is correct, then you need to un-publish the page first. So, there is no published version available - either through workflow or, setting Publish To date into the past, save the change and then set new schedule date(s) and save again.
