How do you change the workflow set on a directory?

Hello,

I have a directory assigned to workflow #2 and needs to be assigned to workflow #3. How does one go about changing a directories workflow after one has already been set?

Well, I answered my own question and figured this out with help from the following documentation.

The section title "Removing pages from a workflow" got me on the right path.
