Is there an easy way to track a click of a link? I do not see it in Activity types. I can also not associate a link click to a conversion in a campaign. It seems like that should be built in. Am I just looking in the wrong place?

You can track the page visits for given link in the web analytics module. From your brief description is not clear what exactly are you looking for.
