Can I rename the pages application to something else. Also I'd like to set a short cut when the pages application is launch and have it go to a specific new page type.

You have to edit app.pages resource string. It is stored in CMSResources folder CMS.resx file.

I'm not sure you can create that short cut.

You can also add a new key in the Localization app with the same key name app.pages and put your string in there. I'd recommend that because your change in the CMS.resx file will be overwritten when you upgrade.
