On community site I found an example how to allow users to create blogs and blog posts. Is it possible (without creating custom functionalities) to allow users to create others document types?

Yes, this functionality is called 'User contributions' and you can read more on https://docs.kentico.com/display/K82/User+contributions. There are some examples too.
Just don't forget to set up page types correctly ;-)
