We have a client that wants to collect some basic information about a person as they load up the chat module. Where out of the box it collects their name, there is not much other information collected. We have looked at simple ways to add additional fields for collection, but it seems no matter what we would have to do some custom coding to make this happen. Our client does not want that, so I thought I would reach out to see if anyone had any ideas on something I have missed to add additional fields to the startup of the chat module (i.e. after it pops up and a person chooses to enter the chat)

not sure that is possible without some custom work. Have you tried to play with Marketing Automation?
I know there is trigger: Contact performed an activity 'Chat request support'
