Our product catalog has collections of products, like product lines. We are thinking of representing these collections as section types, but we need to associate custom fields and categories to the collections. When I try and assign a page type to represent a product section, I can't create custom fields or assign categories. Am I missing something or is there another way to do this?

The Products application is directed on managing only products, the categories only as grouping, so the ability to edit them is limited to bare minimum. You can however manage them from the Page application like any other Page in Kentico.
