Info and provider classes for document types
Are info and provider classes automatically created for each new document type, or would I have to create custom info/provider classes?

Take a look at this post, I give an example of how to access document types, no matter what the document type is. I also suggest looking at the API Examples included with a Kentico install, as it has some good info in there for you.
