Hi,

You can hide particular document from all the navigation (menus, bread crumbs, etc,) using the settings in CMS Desk, when you navigate to the document -> Properties tab -> Menu -> Show in navigation and set it to false.

Or, if you want to hide it only from particular web part, you can use the WHERE condition of given web part to specify what to display and what not.
