You can change what is visible and what's not through an alternative form. If you check the properties of the My account webpart, you can see, that there is an attribute called "Form name". This specifies, which form is used to edit the profile of the user. You can specify a new custom layout or create a new alternative form in CMSSiteManager / Development / System tables / CMS.User / Altrenative forms (or eventualy Layout).
