This behaviour is correct, the form control Product Image selector is meant to be used for a single field and it is representing the product image. If you would like to add a field to System table -> SKU to upload some other image you will find that this is not possible due to the limitation of the system tables. You could add a field File Selection which could contain different image.

Another approach is to simply add this direct file uploader form control field to the document type which the SKU will be bounded to.
