Kentico v7 allows creation of configurable SKUs by assigning multiple Product Option groups to it. A nice example of this feature is the Configurable PC in the Sample E-commerce Site Template.

However your second request feature is not available by default. While the product option group will have the first option preselected by default, you would need to create a new, duplicate product option group with different order of items each time you would like to create a pre-customized product.

To achieve this, you would need to customize the SKU record and the Product option selector control so that you can store which options should be chosen by default for each configurable product.
