Hello,

This might be a simple question that I have missed the answer to, but I would like to limit the authenticated users who may utilize the REST service. Is there a way to do this? ideally something Role based.

No, the REST service usage cannot be restricted this way. However, the REST service itself uses permissions defined in the CMS, so if someone has restricted access to a document for example, he will not be able to use REST service to get it either.
