How do I get the ImageGallery webpart to order the thumbnails horizontally, rather than vertically? See below image.

Hello.

I suppose the simplest solution would be to set "Rows per page" property of this web part to 1.

True, 1 row per page would work, however as the screenshot from the original post shows, we have 4 rows per page. So...how do we display more than 1 row per page and still have the thumbnails display horizionally in ascending order?

Hello.

You can ensure it in \CMSWebParts\Viewers\Documents\ImageGallery.ascx file, if you add RepeatDirection="Horizontal" property into <cms:CMSDataList ID="lstImages" ... > control´s definition.
