I want to add a dropdown, and checkbox controls to the form, but I don't know what the cms tags are for those items.

Hello,

Regrettably, there is no other documentation than the API reference, under the CMS.ExtendedControls name space and our general controls documentation. However, the documentation is currently incomplete, since those controls are usually used only for the UI and not by our customers. We are updating it gradually.
