How do we customize the notification e-mail that is sent to a customer after they have placed an order?

We don't use the Order notification, but we do use the Payment notification and need to change the HTML. We know where to customize the Invoice for example, but we can't find any place to customize the layout, contents, and style of the e-commerce customer notification e-mails.
